Chef cooking to order from a wide variety of breakfast ingredients:
Chopped Virginian Ham, Sausage crumbles, Green Bell Peppers, Chopped Onions, Jalapeno Peppers, Shredded Cheddar Cheese, Sliced Mushrooms and Diced Tomatoes. Chef is required.

Carving Station
Select Two Carved to Order. All Are Specially Slow Roasted to Tender Perfection.
- Smoked Virginia Ham Glazed with Molasses and Brown Sugar.
- Whole Roast Loin of Pork.
- Whole Roast New York Sirloin of Beef.
- Orange Cranberry Glazed Boneless Breast of Turkey.
- Honey and bourbon Glazed Corned Beef Brisket Served with Spicy Dark Mustard.
- Leg of Lamb Rubbed with Garlic, Cracked Black Pepper and Rosemary with a Minted Sauce.
Served with Silver Dollar Rolls and appropriate condiments.

Select Two as an addition to a Ritz Buffet Menu, $7.00 per guest with a $65.00 Chef Fee
Upgrade to Roast Standing Ribs of Beef served with Au Jus and Cream Horseradish Sauce at $2.25 per guest.
Upgrade to Beef Tenderloin served with Béarnaise Sauce at $4.50 per guest with another selection.
The Third and subsequent additions to your first two selections are only $1.50 each per guest.

Italian Kitchen and Pasta Station
Your guests will be able to select either a Penne Macaroni Noodle or a Cavatelli Noodle and then order either of two sauce selections.
Sauces: Alfredo Gorgonzola, Marinara Herb Sauce or Italian Meat Sauce
Crumbled Italian Sausage, Green Peppers, Chopped Onions, Sliced Mushrooms. Black & Green Olives, Roma Tomato dice with Grated Reggiano Parmesan. Served with warm garlic bread.
